1 COBS Apricot Delight Log, crumbled
2 stalks celery, chopped finely
1 small onion, chopped finely
1 cup pitted prunes
1 Tbsp fresh parsley
1 Tbsp fresh chives
1 tsp dried sage
1 tsp dried rosemary
1 tsp thyme
1 Tbsp sweet sherry
1 Tbsp olive oil
Water or white wine, as required
Sauté onions and celery in olive oil until clear and soft. Add dried herbs, prunes and sherry and cook until warm (1-2 minutes). Remove from heat. Stir in parsley, chives, crumbled Apricot Delight Log and egg until combined. Add water or white wine, if necessary. Season to taste with cracked pepper and salt. Place in turkey cavity and cook turkey as required.
