Bacon & Mozzarella Open Grill

Serves 4


1 COBS Bread Pane di Casa loaf

1 tsp olive oil
150g shortcut bacon rashers, cut into short thin strips
Olive oil cooking spray
1 tsp crushed garlic
300g chargrilled red pepper, cut into thin strips
150g mozzarella cheese, thinly sliced


Heat oil in a frying pan over medium heat. Cook bacon for 5 to 6 minutes or until golden and crisp. Remove and drain on paper towel.

Preheat grill on medium-high. Cut four 2cm-thick slices from COBS Bread Pane di Casa loaf and spray both sides of bread with oil.

Grill bread for 1 to 2 minutes each side or until golden. Remove from heat. Spread half a teaspoon of crushed garlic on both sides of the bread.

Top bread with red pepper, bacon and mozzarella. Grill for 2 minutes or until cheese melts. Serve immediately.
