4 COBS Bread Higher Fibre Rolls
300g Minced Beef
1 Tsp Tomato Paste
1 Tsp Dried Oregano
1 Tsp Dried Basil
1 cup Lettuce, shredded
1 Beetroot, sliced
1 Carrot, grated
Mix the minced beef together with the tomato paste, oregano, basil and the egg. Add breadcrumbs, just enough to make sure the mixture is wet, but able to be shaped. Shape into small patties (the diameter should be slightly smaller than that of the bread roll).
Heat a dash of olive oil in a heavy based frypan on a low-medium heat. Cook the patties, turning once until cooked through.
Slice the bread rolls in half and top with the patty, lettuce, beetroot and carrot. For an extra flavour hit, smear some mustard on the top half of the roll.
