Cape® Seed Grilled Veggie


2 slices COBS Cape Seed Bread

½ Red bell pepper
½ Yellow bell pepper
¼ Eggplant
¼ Zucchini
1 Tbsp olive oil
3 sprigs fresh Thyme
1 Tbsp Hummus
¼ cup Crumbled feta cheese


Slice veggies into similar sized pieces, place in bowl and toss with olive oil, thyme and a pinch of salt, then grill until tender. Spread bottom slice with hummus, layer with veggies and feta and top with remaining bread slice.
