4 COBS Cheese and Tomato Rolls
3 cups Mixed Roasted Vegetables (eggplant, pepper, zucchini, pumpkin, sweet potato, etc)
100g packet Goat Cheese, crumbled
Slice a COBS Cheese and Tomato Roll in half put a layer of roasted vegetables on the base. Place half crumbled goats cheese over the vegetables. Add a second layer of vegetables and another of goat cheese. Season with Salt and Pepper and place the top half of the roll on top.
