2 slices COBS Higher Fibre Bread
1 jalapeño pepper
1 slice cheddar cheese
1 slice mozzarella cheese
1 Tbsp cream cheese (optional)
Roast a whole jalapeño in the oven at 350° F for 15 to 20 minutes. Slice thinly. Butter one side of each bread slice. Place cheese on the bottom slice (on plain side) sprinkle with jalapeño slices to taste. Top with remaining bread slice (plain side down). Place sandwich on grill and cook until both sides are golden brown. Finish melting cheese in oven if necessary.
Optional twist: remove jalapeño seeds or add cream cheese to sandwich to cut down on the heat.
