Little Ballerina

Serves 4, or more


1 COBS Bread Higher Fibre Loaf or White Loaf, unsliced

4 tsp Cranberry Sauce
150g Turkey, Sliced
2 cups Lettuce, Shredded


Take one unsliced COBS Bread White Bread Loaf or Higher Fibre Loaf and cut the crusts off the entire loaf.

Very carefully, slice into lengthways slices, being careful not to tear the long slice.

Spread each slice with cranberry sauce and top with a layer of sliced turkey and a thin layer shredded lettuce. Very gently, roll into something resembling a Swiss roll, then cover with cling film and store in the fridge for at least an hour.

Take out of the fridge, unwrap and slice into 2cm thick ‘wheels’. Serve to a party full of Little Ballerinas!
