1 COBS Bread Country Grain Loaf, sliced for sandwiches
¾ cup baby spinach leaves
2 tomatoes, sliced
½ cup reduced fat ricotta cheese
1 Tbsp fresh basil, shredded
Place for slices of COBS Bread Country Grain Bread on a baking tray and top with spinach leaves and tomato slices.
Mix together ricotta and basil. Spread on top of tomatoes and place under grill and cook for 5 minutes or until golden.
