1 COBS Bread Whole Wheat Loaf, sliced
8 slices Grilled Zucchini
8 slices Grilled Eggplant
2 cups Roasted Peppers
4 Tbsp Hummus
Take two slices of COBS Bread Whole Wheat loaf and spread one with lashings of Hummus. Top with two slices each of the grilled zucchini, eggplant and roasted peppers. Complete the sandwich with the second piece of bread, plate up and enjoy.
