Turkish Roasted Pepper & Goat Cheese Sandwich


  • 1 COBS Turkish Roll
  • 1/8 Cup goat cheese
  • 4-6 Roasted bell peppers (sliced)
  • Red onions (sliced)
  • 4-6 Fresh basil leaves
  • Salt & pepper (to taste)


  1. Heat oven to 450 degrees F. On a baking sheet, arrange sliced bell peppers in a single layer and sprinkle lightly with olive oil, salt & pepper. Roast, turning twice, until skins are wrinkled and charred, 20 to 30 minutes. Remove from oven and let stand until peppers are cool enough to handle, about 30 min.
  2. Cut Turkish Roll in half lengthwise and spread bottom half with goat cheese. Add a layer of peppers then place in oven on a low broil until Turkish Roll is slightly toasted.
  3. Garnish with a layer of basil leaves and thinly sliced onion spread out over basil; season with salt and pepper. Serve warm.
