Cheese and Tomato Rolls filled with Roast Veg & Goats Cheese

Serves 4

Ingredients

4 COBS Cheese and Tomato Rolls

3 cups Mixed Roasted Vegetables (eggplant, pepper, zucchini, pumpkin, sweet potato, etc)
100g packet Goats Cheese, crumbled

Method:

Slice a COBS Cheese and Tomato Roll in half put a layer of roasted vegetables on the base. Place half crumbled goats cheese over the vegetables. Add a second layer of vegetables and another of goats cheese. Season with Salt and Pepper and place the top half of the roll on top.
