Behind the Bread: Mike Jackson at COBS Lawson Heights Mall in Saskatoon

We are thrilled to introduce you to Mike Jackson, our first bakery owner in Saskatchewan. He's a baker, a rocker, a proud father and more. Let's take a minute to meet the new local baker of COBS Lawson Heights Mall in Saskatoon!

When did you join the COBS Bread family and what inspired you to do so?

I have been working with COBS for the past year to open the first COBS Bread in Saskatchewan.   My family and I first tried COBS Bread over seven years ago in Kamloops and have enjoyed our visits to their stores ever since. 

I have always enjoyed creating new things; whether they are recipes, computer systems or (my best attempt at) music. When the opportunity arose to take on a new challenge and work with COBS to expand to this region I was very excited to make it happen.   

What did you do before working at COBS?

I have spent most of my career developing and managing application systems; more recently in the area of project management and consulting.

What do you enjoy the most about becoming a COBS Franchise Owner?

I really enjoy the aspect of operating a business that has such a great opportunity to make a difference within our community through our end of day donations, and also by providing such high quality products and service for our neighbours to enjoy. I am very enthusiastic about working with our team of bakers and sales staff to create a business that we can all be proud of, and share that experience with our customers.

Being a COBS franchise owner will also make it so much easier for my young children to tell their friends what their daddy does for a living. “My daddy’s a baker who creates wonderful things for us to share!”  vs  “Hmmmmmmm.......computers???”

Which charities will your bakery donate end of day products to?

We are working with the Saskatoon Food Bank and will continue to support additional donation partners in our community.

How are you planning on getting involved with Saskatoon community?

I would like work closely with local youth sporting groups, schools and our chamber of commerce promoting healthy eating options and community development.

A little more about Mike...

If you could invite three people to dinner who would they be?

Harrison Ford, Jack White and my wife; an icon, an innovator and my best friend.

What do you like to do in your spare time?

I enjoy spending time with my family; camping, biking, playing sports and heading to the beach.   That and the odd round of golf and some guitar in the garage make for a great day!

What did you want to be when you were growing up?

For the longest time, it was Spiderman but then that morphed into Eddie Van Halen.  Guess that would make me the guy hanging upside down from a web kissing the girl while playing a guitar solo.

COBS Lawson Heights Mall will be opening its doors for Community Day next Friday, May 23rd where all sales proceeds will be donated to CHEP Good Food Inc. Hours of operation for the bakery will be 7 am - 7 pm daily.

    Wow! This is great! Whenever I visit my son in Calgary, I pick up a few loaves of Cape Seed and pumpernickle (when avail.) to bring home to S'toon. It's about time we got an excellent bakery here. Be seeing you soon.

    A coworker just told me about a new bakery in our mall (I guess we should get out to the mall more often) and sent me the website.  We look forward to buying our baking there very soon!!!

    Good luck on your new bakery!!  We've been waiting for this for a very very long we won't have to stock pile when we head to Alberta or BC!   Nothing beats COBS!

    - Invest time training your staff from the beginning in customer service and product quality. In three months you can walk away and your bakery can function without you and you can take care of the big picture. 
    - Set the high standard as the minimum expected and don't accept any less than that. 
    - Share the happiness of fresh baking. It's really contagious.

    Good Morning Mike:
    Welcome to The Mall At Lawson Heights Business Community.
    I am the SFT (Store Facility Technician) at Target
    We (wife Joanne) and I first encountered a Cobs Bakery in Vancouver at the business areas around The Oakridge Mall (Cambie & W41st) while we managed high rises at Langara Gardens just down Cambie Street @ W57th.
    Because of working at Lawson Heights Mall and interacting with the administration group I had learned some time ago of the proposed Cobs Store and we are both delighted that this is (finally) happening in Saskatoon.
    I have already told my family members and many of my friends of the bakery coming to town.
    Joanne and I will be on your door step as soon as you open - - and what a convenience that I work at the Target Store  - - - fetching bread on the way home is sweet.
    We know you will be successful because of the location and the product.
