Behind the Bread - Fiona and her second bakery, the new COBS Danforth

Fiona is opening one of the newest COBS Bread bakeries next week in Toronto's Danforth neighbourhood. Fiona isn't new to the bakery though- you might know her as the community-minded owner of COBS Leaside. Learn a little bit more about Fiona in our latest "Behind the Bread."

When did you join the COBS Bread family and what inspired you to do so? 
I joined COBS in 2009 as a Corporate Manager and took possession of the Leaside location on July 1st 2010.  I love what COBS stands for and the quality of the bread we bake.  You can’t find a job that smells any better, or where customers are so happy to take your product home.

What did you do before working at COBS? You name it, I’ve done it: Worked for a circus, worked in a saw mill, became a teacher, worked for the Government, worked in telecommunications in Finance and Marketing – but I still can’t figure out my cell phone!

Why COBS Bread?  It just makes sense.  We are very involved in our communities. Our bread is fresh every day. It has ingredients you can see, touch and spell. (That’s not a typo, you CAN pronounce and spell the ingredients!)

What do you enjoy the most about being a franchise? I love my team.  I love seeing my part-time high school students head off on different adventures and then come back to visit.  I love seeing my young staff take advantage of all the learning opportunities and grow within the company.  I love the collegial nature of the store. I love interacting with the community and serving customers fresh product that I can stand behind.

Which charities will your bakery donate end of day products toI have been so fortunate to have Eastview Community Centre in my family’s life. 100% of our opening day’s proceeds will go directly to Eastview and they will also receive our End of Day Giving products to distribute through their Community Food Bank.  I will also support Toronto Blanket Ministries who will distribute our end of day product to Toronto’s homeless population, in addition to the Bethany Church Food Bank.  We plan to support as many charities and food banks within the community as possible to ensure the less fortunate still have fantastic bread in their lives.

How are you planning on getting involved in the community? We have already connected with a number of schools in the area to assist with fundraising.  And of course, you can see my son proudly sporting his Withrow Park Ball Hockey jersey.  The COBS Bread WheatKings were undefeated last year…then again, so was every other team in the mite division!

A little more about us....

Your Bakery Manager, Dan Murray, has been with COBS Bread for three years.  He ran his own baked goods company for 15 years before coming to COBS.  He is an accomplished baker and a wonderful father to two young boys. 

Your baking team have a collective 40 years of experience to ensure the highest quality product for your family.  You will most likely recognise some of your Sales Team from the neighbourhood.

What do you like to do in your spare time?

I own two busy bakeries and have an energetic four year-old at home; I like to look for ways to find spare time!
