Firecracker Steelhead Burger
The perfect burger
Hot tip: If your Steelhead fillets have skin, score the skin with a few shallow cuts as this will prevent the fillet from curling during the cooking process.

- In a non-stick frying pan add cooking oil, turn on element to med-high heat
- Once the pan is starting to slightly smoke carefully add your steelhead fillets presentation side down first. Cook for 1.5 minutes or until steelhead fillet is golden in color. Flip and cook for another 2 minutes.
- While the steelhead fillets are cooking toast the gourmet hamburger buns.
- Once the other side of the steelhead fillet has turned golden brown in color remove pan from element and drain excess oil form pan. Turn heat down to medium.
- Add butter cubes and once melted add lime juice, lime zest, hot sauce, chili flakes and chives. Turn off heat
- Add 1 tbsp of mayonnaise to each toasted gourmet hamburger bun pieces
- Add 1-2 pieces of leaf lettuce to the “heel” side of the burger.
- Add 2 pieces of sliced tomatoes on top of the leaf lettuce piece(s)
- Add cooked steelhead trout pieces on top of the tomato slices, spoon firecracker sauce over the steelhead trout pieces
- Complete each burger by adding the “crown” part of the burger, add dill pickle on top of the burger, transfer to serving plate, serve.
