Tomato, Basil and Ricotta Melts
- 1 COBS Bread Country Grain Loaf, sliced for sandwiches
- ¾ cup baby spinach leaves
- 2 tomatoes, sliced
- ½ cup reduced fat ricotta cheese
- 1 Tbsp fresh basil, shredded
- Salt and Pepper to taste
Place slices of COBS Bread Country Grain Bread on a baking tray and top with spinach leaves and tomato slices.
Mix together ricotta, basil, salt and pepper. Spread on top of tomatoes and place under grill and cook for 5 minutes or until golden.
