Egg Salad Sandwich
- 4 COBS Whole Wheat or Country Grain Rolls
- 4 Hard Boiled Eggs
- 3 Tbsp Mayonnaise
- Tomatoes, sliced
- Salt and Pepper to taste
Peel hard boiled eggs and place in bowl. Add mayonnaise, salt and pepper and mash together, being careful not to completely pulverize the egg.
Slice the COBS Whole Wheat or Country Grain Rolls in half and spread the egg mixture on, adding the lettuce and tomato on top. Close the roll and you’ve got yourself a smashing lunch!
