- Place berries, chia seeds and a tablespoon of water over low ? medium heat, allowing berries to defrost and come to a simmer.
- Add maple syrup and stir in. Let the mixture bubble away for 10 minutes or so until the mix thickens and becomes jammy.
- When mixture is thick, remove from heat and stir through lemon juice and allow the mix to cool. You can serve jam warm or keep in a sealed container in the fridge, the jam will last several weeks but may need a little warm water added to it if it becomes too thick.
- To serve, toast Chia Fruit Loaf, spread with a little butter and jam and eat immediately.
