Green Goddess Sandwich

Introduction

We've sandwiched all of the best green vegetables between our nutty and Cape Seed Loaf to create the ultimate lunch! This Green Goddess Sandwich is a surefire way to take your lunches from meh to marvellous.


Directions

  1. Make your green goddess sauce by adding basil, parsley, spring onions, lemon, minced garlic, mayonnaise, salt & pepper to a food processor. Blitz until all ingredients are combined & sauce is a runny consistency.
  2. Place butter in a non-stick sauce pan and turn on element to med-high heat. Add drained green peas when butter is hot. Cook for 10 minutes stirring occasionally. Season with salt & pepper.
  3. Transfer cooked green peas to a small mixing bowl, add mayonnaise & green goddess sauce and mash green peas to desired consistency.
  4. Toast Cape Seed loaf slices, if desired.
  5. To assemble the sandwich, we recommend the following order: mashed green peas, mozarella, cucumber, avocado, bean sprouts.
