Roasted Asparagus Recipe

Introduction

Make the most of asparagus season! This recipe creates perfectly roasted asparagus, and then we top it with a full-flavoured breadcrumb topping. The breadcrumbs are made with our Sourdough Loaf then seasoned with lemon zest and parmesan.


Directions

  1. Preheat oven to 425F and prepare 2 parchment-lined baking sheets
  2. Snap off he base of each asparagus and discard. Add asparagus to the baking tray
  3. Drizzle asparagus with olive oil and season with salt & pepper. Toss lightly with your hands
  4. On the other tray, place your sourdough slices
  5. Bake sourdough for 10 minutes, until slices are completely dried out.
  6. Bake asparagus for 12-15 minutes
  7. Roughly tear the baked sourdough into medium pieces and put into a blender. Pulse until it resembles breadcrumbs
  8. In a medium-sized bowl, mix breadcrumbs, lemon zest and parmesan. Toss until combined
