his cozy Sourdough Banana Bread Pudding turns day-old COBS Sourdough, ripe bananas, and chocolate chips into a warm, custardy dessert. It’s an easy way to use leftover sourdough and turn it into something sweet.
Directions
Preheat oven to 375°F and lightly grease a baking dish.
Add the cubed COBS Sourdough to the baking dish and drizzle with melted butter.
Mash 2 bananas in a large bowl. Whisk in the eggs, milk, brown sugar, vanilla, cinnamon, and salt.
Pour the banana mixture over the sourdough and gently toss until the bread is evenly coated.
Slice the remaining banana and fold it into the bread mixture along with the chocolate chips.
Let sit for 10 minutes so the sourdough can soak up the custard.
Bake for 40–45 minutes, until golden on top and set in the centre.
Serve warm with a dusting of icing sugar or a drizzle of maple syrup, if desired.
