- Your choice of COBS Bread, sliced. We recommend COBS Bread Turkish Bread or French Baguette
- 400g can of chickpeas
- 3 beets, peeled, boiled until soft
- 4 cloves garlic, crushed
- 1 lemon, juiced
- 1/3 cup olive oil, plus extra for drizzling
- 1 tsp ground cumin
- 4 Tbsp tahini
- 2 parsley springs, leaves picked and roughly chopped
Drain and rinse the chickpeas and keep a tablespoon of chickpeas aside to garnish the hummus.
Place all ingredients except the Turkish Bread and parsley into a blender and process till smooth. If it’s too thick, gently drizzle a little water into the mixture until the consistency is just right.
Put the dip in a bowl and top with a drizzle of olive oil, reserved chickpeas and chopped parsley.
Slice the Turkish Bread diagonally to serve with hummus.
